Loaded Butternut Squash
This meal can be prepared as suggested. Alternatively you can cut the squash into smaller pieces before baking and mix with filling.
Step 1: Pre heat oven to 400 degrees
Step 2: Remove squash from packaging and bake in the oven for approximatly 15 minutues (cut side down). Flip the squash to cut side facing up and bake for another 30 minutes until tender.
Step 3: Bring 1 -2 cups of water to a boil in a small to medium sauce pan. Add quinoa to boiling water, reduce heat and cook until quinoa is fluffy. Drain off excess water if needed and let cool.
Step 4: Preheat a medium to large skillet with ~1 tbsp cooking oil and empty contents of mushroom mixture into pan. Saute' until tender and add in cooked quinoa
Step 5: Fill baked squash with quinoa mushroom filling. Then place back in the oven to roast another 5 minutes.
Step 6: Remove from the oven, plate, and enjoy!
