Chimichurri Shrimp with Coconut Rice and Broccoli

Steps
Step 1: Remove coconut rice from packaging and place in a small to medium size pot. Add 1- 1/2 cups of water to rice and cook over medium heat until rice is tender. Add more water if needed
Step 2: Heat ~1 tbsp oil in a large skillet over medium high heat. Add shrimp, and saute for 5 minutes. Turn heat down to medium low.
Step 3: Heat ~½-1 tbsp of oil in a skillet and add contents of broccoli package. Saute until tender but but still bright green in color (tip: add a little bit of water to pan so that broccoli does not burn
Step 4: Plate & enjoy
