Curried Chickpeas & Potatoes, Basmati Rice and Spinach (vegetarian)

Steps

  • Step 1: Boil two cups of water in a medium size pot and add rice and cook for 20 min 

  • Step 2: Empty contents of curry into a large pot and add 2 1/2 cups of water.  

  • Step 3: Cook curry of medium-high heat for 20-25 minutes 

  • Step 4: Let simmer for 5 minutes  

  • Step 5: Garnish with fresh or sauteed spinach  

  • Step 6: Spoon curry and spinach over rice on a plate on bowl and enjoy!
